Ever wondered why some bakeries price their cakes and cupcakes significantly lower than others? The difference isn't just about brand names or fancy packaging — it goes much deeper. Here's what's really behind the price tag.
1. The Ingredients They Use
It's not about which brands are on the shelf — it's about what's actually going into your dessert. Budget-friendly bakeries often swap premium ingredients for cheaper substitutes that look similar on the surface but taste (and behave) very differently.
A common example: butter versus shortening. Real butter creates a rich, melt-in-your-mouth flavour and a naturally smooth finish. Shortening is cheaper, more shelf-stable, and easier to work with — but the taste and texture are noticeably different.
The same goes for whipped cream versus whipped topping. Real dairy-based whipped cream costs significantly more to produce — palm-oil based whipped toppings can cost less than half the price. They may look identical on a cake, but the ingredients tell a very different story. Always check what's actually in your dessert.
The same applies to fillings. Store-bought fillings loaded with preservatives are far cheaper and faster to use than scratch-made curds, compotes, or creams. But when you taste the difference side by side, it's hard to go back.

- Premade versus made from scratch: Buying premixed batters or pre-made bases dramatically reduces prep time and labour costs. Scratch baking requires more skill, more time, and better quality control — but the end product speaks for itself.
These process choices aren't always visible to the customer, but they show up in the flavour, texture, and shelf life of what you're eating.
3. Time to Produce
Handcrafted work simply takes longer — and that time is reflected in the price. A cupcake or cake topped with a cardboard topper or a plastic toy can be finished in minutes. A handcrafted buttercream floral arrangement, a custom design, or a made-from-scratch flavour combination requires skill, patience, and significantly more time per piece.
That's why truly handcrafted bakes are more unique, more personal, and yes — priced accordingly. You're not just paying for ingredients. You're paying for the hours of craft behind every single piece.
